Part of the Savoring Series, which is one of my favorite series of books about Regional Cuisine, Savoring Tuscany is a beautiful book filled with sumptuous recipes and delectable writing about the cuisine and culture of Tuscany. As with all the books in the series, Savoring Tuscany is put together beautifully and all of the recipes are well written and presented. The recipes that we tested were all superb and the book is an excellent source for fans of Tuscan cuisine. |

Another simple, yet divine Tuscan entree is this chicken dish which is very simple and easy to make. The truffles are obviously the finishing touch that make the dish so special, but your favorite fresh mushrooms or even a drizzle of truffle oil if you cannot find truffles in your area also make for a special dish.
Chicken Breasts with Ham, Cheese, and Truffles
Another simple, yet divine Tuscan entree is this chicken dish which is very simple and easy to make. The truffles are obviously the finishing touch that make the dish so special, but your favorite fresh mushrooms or even a drizzle of truffle oil if you cannot find truffles in your area also make for a special dish. Parma ham can be found in most delis, but if you cannot find it, any thinly sliced Italian or high quality ham can be used.
4 boneless skinless chicken breast halves 3 tablespoons flour Salt Freshly ground black pepper 3 tablespoons butter 4 thin slices Parma ham 1/2 cup freshly grated Parmesan cheese 2 thinly sliced white truffles
Lightly coat the chicken with the flour and season with salt and pepper. Melt the butter in a large heavy skillet over medium heat. Cook the chicken until golden brown and cooked through, turning the breasts frequently while cooking, for about 15 minutes. Top each chicken breast with a ham slice and two tablespoons of the grated cheese. Sprinkle the truffles overtop and serve immediately.
Makes 4 servings.
