As with all the books in the series, Savoring Tuscany is put together beautifully and all of the recipes are well written and presented. The recipes that we tested were all superb and the book is an excellent source for fans of Tuscan cuisine. |

Crockpot Tuscan Stew

10 3/4 oz. can tomato soup
10 1/2 oz. can beef broth
1/2 cup red wine
2 pounds cubed stew beef
14 1/2 oz. can diced Italian-style tomatoes
3 large chopped carrots
1 teaspoon Italian seasoning
1 teaspoon garlic powder
Salt
Pepper
32 oz. drained and rinsed Tuscan cannellini beans
1 cup minced fresh parsley
1/2 cup grated Parmesan cheese
Combine the soup, broth, wine, beef, tomatoes, carrots, and seasoning in crockpot. Cover and cook on Low for 8 9 hours. Stir in beans and parsley 20 minutes before serving. Cover and heat through.
